Hornblower is looking for a
Dynamic Working Sous Chef to lead the Culinary Operations for our Marina del Rey location.
We are currently seeking a Sous Chef for our Marina del Rey port. This position reports to the Executive Chef. The Sous Chef is responsible for maximizing crew productivity and minimizing costs and wages.
You will work closely with the Executive Chef in coordinating and executing scheduled Menu Changes and establish presentation, technique and quality standards throughout the year.
As a Sous Chef, you will…
· Train and manage kitchen personnel and supervise/coordinate all related culinary activities;
· Estimate food consumption and requisition or purchase food,
· Select and develop recipes and standardize production recipes to ensure consistent quality.
· Be responsible for proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen.
This position is a “hands on” position and will be expected to work events with your crew as business demands and oversee special catering events. The Sous Chef, under the direction of the Executive Chef will supervise kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases.
